    berry smoothie pops for breakfast

    i served these berry smoothie pops to all the kids this morning as a starter while i was working on lemon pancakes for brunch.

    you need:

    1 cup of orange juice (not from concentrate)

    1 cup water

    1 cup almond milk

    20g flax seeds

    2 cups frozen mixed berries (raspberries, strawberries, blackberries, blueberries)

    2 tsp. vanilla extract

    how to:

    blend everything in a high speed blender and pour directly into popsicle molds. freeze for min. 4 hours.



    winter curry

    although we’re finally heading for spring here, it’s still under 5C during the day and therefore i decided to make this winter curry last night. it’s fairly simple and easy to make. it freezes well for up to 6 weeks, which is really nice. i like to keep a few boxes of ‘easy dinner’ in the freezer. winter curry and soups works very well.

    the winter curry can be made more or less spicy as you prefer. we usually makes it medium hot, and put chili powder and tabasco on the table too.

    2 big onions
    3 big carrots
    4 apples
    3 tbsp. yellow curry
    1 tsp. cinnamon
    4 c water
    4 cubes vegetable broth
    1 can pineapple tidbits
    1 c soaked and cooked chick peas/ 1 can washed and drained
    extra virgin olive oil

    how to:

    1. peel, wash and chop up onions, carrots and apples.
    1. stir onions, carrots, apples and pineapple in olive oil.
    2. add curry and cinnamon and stir for a couple of minutes.
    3. add water and broth.
    4. let simmer for 20-30min.
    5. add beans/chickpeas of your choice and pineapple.
    6. salt and pepper if needed.

    7. serve with short grain, brown rice.

    little miss f reminded me about something i forgot, and she was very proud she remembered and reminded me. she promptly replied:

    “I have a little small brain, but a lot of things can fit in there.”

    a pair of twin boys from flora’s school invited her to their birthday party on the weekend, and she brings home an invitation:

    “i know why they invited me – they both want to merry me…”  (smiling big)

    at school they have a ‘beach day’ in mid march. flora explains:

    “mom it’s only a pretend beach day. it’s not a real one. that’s a good thing right? cause it would be way too cold… or we would have to go to hawaii or something, for it to be warm enough, but we can’t, because then our parents would miss us… and we would miss our parents. …we are bringing in a towel to sit on, and buckets and sun glasses, and we are going to have a picnic on the beach… we are going to pretend the carpet is the beach.”
