this paté has been a favourite of mine for many many years. you can serve it hot or cold, in a sandwich, for brunch, christmas lunch or with cheese. it can be variated in a ton of different ways, using different types of nuts and spices. i’ve experimented quite a bit, but this version with hazelnuts is my favourite.
what you need:
225g dry hazelnuts*
2 medium sized yellow onions
3dl vegetable bouillon
2 tsp miso
2 tsp herbs de provence
1 tbsp coconut oil
how to:
1. chop the onions very finely by hand and fry lightly in oil.
2. chop the nuts in a food processor until they are very tiny pieces.
3. heat up vegetable broth, add miso and spice.
4. mix everything well.
5. bake in oven for 30 minutes @ 180c.
*you can avoid the acid in the nuts, by soaking the nuts overnight. lots of people are allergic to the acid – not the nut itself.
this paté lasts for about a week in the fridge.
